Zucchini with onions – en.Kung-Food

Well, I love all food, from traditional Italian recipes to strange ethnic food. But with these zucchini with onions it’s a whole different story. It’s a dish that I prepare when I just fancy something light, tasty, unexpensive and not heavy. Or when I feel like I want a really easy side dish. So let’s make super duper easy zucchini with onions, ok? There’s not much to say really about this easy recipe, the method you’ll see below is so basic that even beginners will find it extremely easy. This dish is quite popular in many countries I visited, but I realized it’s particularly common in Spain and in Japan. Oh, and in Italy. I was about to forget about my native country. INGREDIENTS 4-1/2 lbs zucchini finely sliced 2-1/4 lbs onions in very thin strips 2 cups olive oil Oregano White pepper 4 garlic cloves, crushed in a mortar


Heat the olive oil in a saucepan and add the garlic. Before it begins to darken, add the onion. Lower the heat and leave to cook very slowly. When the onion begins to soften, add the zucchini, stir, and cover.

Cook slowly for approximately twenty minutes. Season with salt, pepper, and oregano and continue to cook until both the onion and the zucchini are soft. Drain well your zucchini with onions before serving this lovely dish.
