Potato salad – en.Kung-Food

Potato salad is a dish made from boiled potatoes that comes in many versions in different regions of the world: in fact, it’s a common recipe in countries such as Germany, Italy, United States, Czech Republic and Syria. Though called a salad, it is generally a side dish, as it usually accompanies the main course. Potato salad is very often served with barbecue, roasts, hot dogs, fried chicken, hamburgers and cold sandwiches. It is generally considered casual fare, and as such is typically served at picnics, outdoor barbecues, potlucks and other casual meals and events. It is a popular menu choice of cooks preparing food for a large number of people, because it is easily made in large quantities, it can be prepared in advance and refrigerated until needed, and requires inexpensive ingredients (potatoes are well known for being inexpensive but extremely filling and tasty).

INGREDIENTS 1kg potatoes, peeled, cut into cubes 1 cup fat-free mayonnaise 1 lemon, juiced 1 red onion, finely chopped Olive oil, to taste 100g shaved honey leg ham, finely chopped

1/2 cup basil leaves, finely shredded

Place the potatoes in a large saucepan and cover them with cold water. Bring to the boil over high heat. Reduce heat to medium and cook the potatoes, uncovered, for 3-4 minutes or until they are tender when pierced with a skewer. Drain and transfer to a bowl. Combine mayonnaise, 2 tablespoons lemon juice, onion and salt in a small bowl. Pour half over warm potato (potato will absorb flavour while still warm).

Stir gently with a plastic spatula (this prevents potato from breaking up) to coat. Cover with plastic wrap and set aside to cool. Heat a non-stick frying pan over medium heat. Spray with oil, then add the ham and cook for 3-4 minutes, or until golden. Set aside to cool. Add ham, basil and remaining dressing to the potatoes. Stir gently to combine and season with salt and pepper. Your potato salad is ready to be served!
