Looking for a healthier alternative to ice cream? Try these fresh mango and yogurt popsicles, everyone will love them! The combination of mango and yogurt is really delicious, it will make you want to eat more than just one popsicle and in the end you can, considering these pops are quite healthy. I used some strange molds to prepare these mango and yogurt popsicles, I love them when I first saw them so I thought I’d buy them and try them out immediately. Such popsicles are also a great way to use up that fruit that’s almost past it’s peak, plus they are so easy to make, as you only need 2 ingredients: mango pulp and yogurt, nothing else. I would prefer using fresh mangoes as they taste amazing but for this recipe you can use canned ones, if they are not in season. The vanilla gives a nice taste to these popsicles so in case you are using plain yogurt, add 1/2 teaspoon of pure vanilla extract to it.
INGREDIENTS 3 ripe mangoes, cheeks removed, coarsely chopped
260g (1 cup) vanilla yoghurt
Place mangoes in the bowl of a food processor and process until smooth. Transfer to a bowl.
Add vanilla yoghurt and gently fold until mixture is just combined.
Spoon the mango mixture evenly among eight 80ml (1/3-cup) capacity ice-block moulds.
Place in the freezer for 8 hours or until firm and then… enjoy your mango and yogurt popsicles!!
