Guacamole deviled eggs are a healthy and inviting appetizer (or snack), ideal for those on a dietary restricion, like vegetarian, gluten-free, weight watchers, low-carb and so on. These green, tasty eggs are loaded with a high dose of healthy fats but at the same time they are really addictive! It’s really quick and easy to prepare a few guacamole deviled eggs, either for lunch or dinner or for a party or even for St Patrick’s Day. They are awesome any time of the year and once you put them on the plate, they are also really nice to look at, so your guests will definitely love this appetizer. Their spicy kick, taken from the serrano or jalapeno chili pepper, is amazing; we used 1 serrano but if you want your eggs more spicy, then we suggest you to double up the dose.
INGREDIENTS 6 large eggs 1 ripe avocado Juice of 1 lime 1/2 teaspoon salt 1 tablespoon sour cream 3 tablespoons minced red onion 1 serrano or 1/2 jalapeno chili pepper, minced
1 green onion, chopped
Add the eggs to a saucepan filled with cold water. Bring to a boil, then turn off the heat and cover with a lid; let sit for 10 minutes.
Drain the eggs, then rinse and peel them under cold water.
Add the sour cream, avocado, red onion, garlic and lime juice to a large bowl, slice the eggs in half and pop out the yolks into the mixture.
Mash everything up until it’s all nice and smooth. Taste for seasoning and adjust if necessary, then fill the whites back up with the filling.
Your guacamole deviled eggs are ready!
