Asparagus can be combined with many other ingredients and, whenever is in season, there are no reasons not to eat it, considering it is also loaded with nutrients. Asparagus is a great source of vitamin A and C, it has loads of fiber too, and it’s literally packed with antioxidants, which makes it a really healthy element and not just a tasty one. Asparagus frittata is one lovely, quick and easy way to use asparagus; this delicious flavours combo is perfect for breakfast, for your brunch, for lunch or even dinner. This healthy firttata is quite filling and it’s awesome also because it’s really inexpensive to make; I suggest this particular frittata whenever asparagus is in season, even though it can be found in stores any time of the year.
INGREDIENTS 2 tablespoons unsalted butter 1/3 cup shallots, minced 1/2 teaspoon salt 1 pound asparagus, tough ends snapped off 6 large eggs, lightly beaten
1/2 cup shredded Swiss cheese
To cook your asparagus frittata, take a frying pan and heat the butter over medium-high heat, then add the shallots and cook, stirring occasionally until they become softer and almost translucent, which should take about 3 minutes. Time to reduce heat to medium-low and to add the asparagus, cooking for another 3 minutes.
Pour the eggs in the frying pan and cook until almost set, leaving them a bit runny on top, for 2 minutes. Add some grated cheese, either Swiss or any cheese you prefer, and finish cooking. If you want a richer asparagus frittata, you can add some diced onion and/or diced ham.
