Lentils with chorizo – en.Kung-Food

Try this simple but wonderfully delicious recipe for lentils with chorizo. There are so many lentil recipes, but this has to be one of the best! Italians eat a lot of lentils, especially around Christmas. It is one of the staple basic family meals and one of the most popular meals on a bar lunch menu. There are three very good reasons for this: lentils are cheap and easy to prepare, extremely good for you and very tasty to eat. There are many ways to prepare “lenticchie” and many different types of lentils. They are usually cooked up in a pressure cooker and always served to the table piping hot with a decent chunk of bread on the side. Lentils with chorizo is the type of comfort meal that is not only incredibly nutritious, but also puts a massive smile on your face. The smile gets even wider when you find that tasty chunk of chorizo (or salsiccia as we call it) lurking amongst the vegetables!

INGREDIENTS 500g of dry lentils A chunk of Spanish chorizo 1 onion 2 carrots 3 cloves of garlic 1 pinch of chili flakes Olive oil Salt, to taste

Pepper, to taste

Chop the onion and the carrot and peal the garlic. Take the skin off the chorizo and cut it into 3 pieces. Put the lentils, chorizo and the vegetables into a pressure cooker. Add some water to cover. Season with salt, pepper and the chili flakes. Pour in a bit of olive oil. Stir and close the pressure cooker well. Cook on a high heat until the steam comes out. Then change to a low heat and cook for 10 minutes.

When done, do not open the pressure cooker until the steam is completely gone. To make this quicker, put the pressure cooker under the cold tap. Then open it and add some water if all has evaporated. Serve lentils with chorizo with some good rustic bread.

Note: If you are vegetarian, just swap the chorizo for a tablespoon of spicy or mild paprika.
