Watermelon and mango salad is a colorful mix of fruits enriched with sugar, white wine and Maraschino to make a healthy and refreshing summer dish. It’s summer. Which means it’s HOT — unless you live in some frozen part of the world, in which case I’m really, really sorry. I, on the other hand, am here in Italy, sweltering in the summer sun. To combat the heat, I’m trying to give you recipes for food we can serve cold. When I think of cold food, salad is the first thing that comes to mind — but not just any salad; fruit salad, pasta salad, macaroni salad, potato salad, and of course regular garden salads and the like. I love all of the above. But my favorite salads always incorporate at least 2 or 3 kind of fruits, like this juicy watermelon and mango salad. Enjoy!
INGREDIENTS 1 medium watermelon 1 small melon or 1 mango Lychees 4 spoons of sugar 1 small glass of white wine
1 small glass of Maraschino
DIRECTIONS
Remove the skin from the mango. Cut the melon in half and remove the pulp with a potato shaper spoon. Cut off the top third of the watermelon and remove the pulp, using the same spoon.
Place all the fruit in a bowl and sprinkle the sugar on top, adding the maraschino and the wine. Leave to cool in the refrigerator. Serve watermelon and mango salad either in a large bowl or in individual servings.
