Tom yum soup – en.Kung-Food

One of the most famous of all Thai foods, and what I think is one the best soups in the world, is Thai tom yum soup, also called tom yum goong (ต้มยำกุ้ง). What I love most about tom yum soup is the flavors of lemongrass, galangal, kaffir lime leaves, fresh Thai chilies, and fresh lime juice, that all combine to create a healthy and soothing broth that will light up your taste buds. See what I mean when I say healthy food can taste great and be a really good alternative to pre-made foods? If you’re looking to cook an awesome and authentic soup, try this tom yum soup recipe. This recipe I’m writing down here is for local Thai street food style tom yum soup – it’s not the fancy kind – but follow this recipe for the authentic taste you’ll find in Thailand. I hope you will enjoy it as much as me and my girlfriend did: we had it for dinner on a sunday and we both wished we prepared more of it.

INGREDIENTStom-yum-soup-300x225-6454033 700ml chicken stock 1 lemongrass stalk, bruised and cut into large pieces 5 thick slices galangal 3 coriander roots or 6 stems, bruised, plus leaves to garnish 3 lime leaves, torn 6 large prawns, shelled 3 tablespoons Thai fish sauce 6 small green chillies, chopped

4 tablespoons lime juice

DIRECTIONS
Bring the stock to a boil in a medium-sized saucepan. Add the lemongrass, galangal, coriander roots and lime leaves, then simmer for 2 mins. Add the prawns, fish sauce, chillies and lime juice, then return to the boil.

Taste and adjust the seasoning with either more lime juice or fish sauce, then garnish tom yom soup with coriander leaves and serve.
