Cajun chicken – en.Kung-Food

This Cajun chicken is perfect for healthy quick dinners and meal preps. If you are trying to lose weight, or get leaner and see more muscle definition, this Cajun chicken is perfect for your diet. Chicken breast, the leanest part of the chicken, rubbed with spices to add flavour without calories. I love making my own spice mixes because I control the ingredients and they are darn cheap. I don’t know about you but I always have various spices on their own and never a mix. So, in the past year I started to make my own – pumpkin pie spice, taco seasoning and now cajun spice. I love serving Cajun chicken with some of my favorite dips, either ranch dressing or guacamole, but you can use any dip you like, really. Just experiment and see which one you like the most combined with this chicken dish.

INGREDIENTS 4 skinless boneless chicken breast fillets 1 tbsp paprika 1 tsp dried onion flakes ¼ tsp cayenne pepper 2 tsp dried thyme 1 tbsp sunflower oil

200g tub guacamole, to serve

Dry chicken with kitchen paper, then cut diagonal slashes over the smooth side. Mix spices with seasoning, then tip onto a plate. Brush the chicken on both sides with the oil, then coat all over with the spice mix.

Heat a barbecue, griddle pan or grill, then cook the chicken for 5-6 mins on each side until cooked through. Serve each portion of Cajun chicken with a dollop of guacamole.
