Well, I love all food, from traditional Italian recipes to strange ethnic food. But with these zucchini with onions it’s a whole different story. It’s a dish that I prepare when I just fancy something light, tasty, unexpensive and not heavy. Or when I feel like I want a really easy side dish. So let’s make super duper easy zucchini with onions, ok? There’s not much to say really about this easy recipe, the method you’ll see below is so basic that even beginners will find it extremely easy. I love the way zucchinis taste when they are grilled and, when in season, they can be cooked in so many ways and be used in so many dishes. One of the most interesting recipes including grilled zucchinis, in my opinion,  is grilled garlic Parmesan zucchini. This zucchini taste just fantastic. I really love the way zucchini taste on the grill, they are so tender but they keep all their flavor and taste. The zucchini are covered in a garlic butter and parmesan cheese: a lovely combination that almost everyone will most likely adore. This is a great summer side dish and the Parmesan adds a nice nuttiness, with the garlic giving it just the right kick. Grilled garlic Parmesan zucchini perfectly complements steak, ribs, chicken or fish. By the way, these can be done in the oven under the broiler as well.

Cucumber and zucchini salad is a typical recipe from Ivory Coast, a light dish full of veggies, healthy and extremely easy and quick to make. With lots of vitamins and elements good for the body, vegetables are highly suggested in your everyday diet; even though I love meat I must confess this cucumber and zucchini salad really surprised me and it’s my favorite salad, at the moment. Somewhere I read that the foundation of diet in Ivory Coast, South Africa and other African countries is fruit and veggies, together with fish. Here in Europe as well as in the US most people base their diet on meats and breads, but my goal for the near future is to start improving the consumption of those vegetables that I never used to love in the past. So if you are willing to try an African recipe and fancy a light meal, or if you are vegetarian and you are looking for new recipes, here’s the cucumber and zucchini salad: fresh and perfect for the summer.
