I am counting down the days to our holidays. I have a ton of things to do before then; one of the most important things is to use up all the ingredients I have in my kitchen: a ton of garlic, lots of frozen chicken, plain yogurt, half bottle of white wine, etc. Sometimes, the most random ingredients pair so flawlessly together, and this is exactly how this amazing and absolutely scrumptious garlic chicken was concocted. For the chicken, I used skin-on chicken thighs, but you can debone the thighs if you like. This will ensure that you get the best of the chicken thighs: moist, tender, crispy on the bottom but not dry, with skin and without bones. That’s the way go to with chicken thighs, trust me on that – deboned and skin-on! This garlic chicken is delightful with some pasta, and they are done in about 20 minutes. Bon appetit!

During my travels a few years ago, I spent over a month in Seychelles Islands for work and one evening, I ate at a lovely restaurant in Anse Lazio, near the beach. Eating out in Seychelles is usually not expensive and the food is generally fresh and delicious. And as usually happens with me, since I want to try everything that sounds intriguing or new, my eyes are bigger than my stomach… I ended up ordering an avocado appetiser and a full entree. Fortunately, the fish entree was a normal portion, or else I would’ve had to leave it there or exploded. The appetiser was stuffed avocados with garlic shrimp and other ingredients, which I cannot recall. What I do know is that it was rather creamy. In Spain, a halved avocado stuffed with shrimp and/or ensaladilla is tapa that is very typical in Granada, where bars give you a free tapa with a paid drink. I can’t recall the last time I had a stuffed avocado, so these stuffed avocados with garlic shrimp I had in Anse Lazio tasted sublimely divine!

It’s a simple equation: a cheese omelet, toast with butter, bacon, coffee, orange juice and these garlic baked potatoes equals a perfect breakfast. At least it does for me. It was also a can’t-miss morning after breakfast back in my bachelor days. Even girls who avoided carbs like the plague would ask for seconds of these potatoes. When baked right, these spuds steal the show with a slightly nutty, toasty flavor and a texture that’s crisp on the outside and pleasingly soft on the inside. They’re waaaay less greasy than hash browns or home fries, but I’ve still found them to help hangover recovery. You can add a few sprigs of rosemary into the mix if you’re into it, and I like to spice things up with a couple extra dashes of cayenne. Otherwise, garlic baked potatoes is an easy dish to help complete a breakfast or brunch — or make it at night as a quick side for fish or meat entrees.
